This is our vegan “parmesan cheese.”
Makes approximately 1 cup

Ingredients

1 cup Brazil nuts
1 cup cashew nuts
¼ cup nutritional yeast
salt and pepper to taste

Method

  1. Toast nuts in a 350-degree oven for 10 minutes. Let cool slightly.
  2. Combine all ingredients in a food processor and pulse until you have the consistency of grated cheese.

Note

  • Can refrigerate for 2 weeks.

 

    Freezes well.
